Eggplant "Parmigiano"

Ingredients
- Eggplant - 4
- Spice "Oregano flowers" from MANTRA - 4 flowers
- Spice "Basil" from Santa Verde - 10g
- Strachatella cheese - 400g
- Parmesan cheese - 200g
- Onions - 2
- Garlic - 4 cloves
- Tomatoes cherry - 2 sprigs
- Olive oil - 120ml
- Breadcrumbs - 60g
- Butter - 60g
- Salt - to taste
Method of preparation
- Wash the eggplants, make a few punctures with a knife. Bake in the oven on upper and lower heat mode for 40 minutes.
- Combine breadcrumbs and grated Parmesan.
- Remove the cooked eggplants, peel them, sprinkle with a mixture of breadcrumbs and Parmesan. Turn on the "Grill" mode and bake until the cheese crust forms for another 10 minutes.
- For the sauce, finely chop the onion and garlic, cherry in half, add basil.
- Put everything in a frying pan, add olive and butter, fry onions and garlic until soft. Add the cherry and oregano. Add salt to taste. Simmer for 5 minutes. Add some more basil and oregano flowers.
- Place some of the sauce and eggplant on a plate. On top is a strachatella and some grated Parmesan. Spread the sauce nearby. Enjoy your meal!
