Chicken Curry

  • 2 tablespoons of AllSpiceWorld seasoning “Curry“,
  • 1 tablespoon vegetable oil,
  • 1 onion, 
  • 1 table spoon ginger,
  • 4 cloves garlic minced,
  • ½ cup water or chicken stock,
  • 350 g canned or fresh tomatoes, 
  • 700 g chicken breasts,
  • ½ teaspoon cornstarch, 
  • 350 ml heavy cream or coconut milk,
  • Chopped fresh cilantro

Method of preparation

  1. Heat the oil in a large pot over medium low heat.
  2. Add the onions, ginger and minced garlic and cook for a few minutes until the onions are fragrant and softened.
  3. Add the chicken and cook for 2-3 minutes, browning it a little.
  4. Add curry powder from ASW and tomato paste or finely chopped fresh tomatoes; cook for 5 minutes.
  5. Add the coconut milk or heavy cream, and let simmer for 15-20 minutes or until the chicken is fully cooked.
  6. Add water or chicken stock depending on the consistency you want for the sauce let simmer longer to thicken if needed. You also can use a bit cornstarch for that.
  7. Taste and salt if needed

Top with fresh cilantro, serve over cooked rice.
