Chicken Curry

Ingredients
- 2 tablespoons of AllSpiceWorld seasoning “Curry“,
- 1 tablespoon vegetable oil,
- 1 onion,
- 1 table spoon ginger,
- 4 cloves garlic minced,
- ½ cup water or chicken stock,
- 350 g canned or fresh tomatoes,
- 700 g chicken breasts,
- ½ teaspoon cornstarch,
- 350 ml heavy cream or coconut milk,
- Chopped fresh cilantro
Method of preparation
- Heat the oil in a large pot over medium low heat.
- Add the onions, ginger and minced garlic and cook for a few minutes until the onions are fragrant and softened.
- Add the chicken and cook for 2-3 minutes, browning it a little.
- Add curry powder from ASW and tomato paste or finely chopped fresh tomatoes; cook for 5 minutes.
- Add the coconut milk or heavy cream, and let simmer for 15-20 minutes or until the chicken is fully cooked.
- Add water or chicken stock depending on the consistency you want for the sauce let simmer longer to thicken if needed. You also can use a bit cornstarch for that.
- Taste and salt if needed
Top with fresh cilantro, serve over cooked rice.
